Non-Dairy Coconut Whipped Topping

Coconut Whipped Topping

One can of full-fat coconut milk 1 tsp pure vanilla extract 1/4 tsp Stevia (or use sweetener of your choice)

Directions

1. Place the can in the refrigerator for 4 hours or overnight, to separate the cream from the water.

2. Place your mixing bowl and beaters in the refrigerator for at least 30 minutes prior to starting -- this will help speed up the whipping process.

3. Open the can of coconut milk and carefully scoop out the cream into your mixing bowl (the top 3/4 of the can will be cream and the bottom 1/4 of the can will be water). Make sure not to include any water, as any amount will harm your results.

4. Add vanilla and Stevia and whip until it reaches the right consistency.

Eat with any berries of your choice for a delicious, no-guilt dessert that is low in carbs and very healthy. Makes 1-1/2 cups of whipped topping (9.6 carbs total).
